GENERAL MANAGER (FOOD CONCESSION)

Our client is looking for an individual with strong leadership skills to hire as the General Manager to assist with the company’s operations.

ROLE PROFILE

The Selected candidate will oversee the daily operations, profitability, and growth of the food outlet within the shopping mall. He / She will be managing a team of staff, ensuring excellent customer service, maintaining high-quality food standards, meeting sales and financial targets, and implementing operational strategies that drive growth and improve operational efficiency.

DUTIES/RESPONSIBILITIES

  • Oversee all day-to-day operations of the food concession, ensuring a smooth and efficient service delivery.
  • Monitor and maintain high standards of food quality, cleanliness, and hygiene in compliance with health and safety regulations.
  • Ensure all stock levels are adequate and manage inventory effectively to minimize waste and reduce costs.
  • Manage and schedule staffing requirements to meet operational demands, ensuring optimum performance during peak hours and seasons.
  • Implement and maintain effective standard operating procedures (SOPs) for staff and operations.
  • Lead, coach, and motivate a diverse team, fostering a culture of teamwork, customer service excellence, and high morale.
  • Conduct regular training and development to enhance employee skills and performance, ensuring team members are up to date on safety, food handling, and customer service procedures.
  • Conduct performance evaluations and provide constructive feedback to staff, identifying areas for improvement.
  • Ensure all staff comply with internal policies, procedures, and health and safety standards.
  • Manage employee schedules, payroll, and ensure adherence to labour laws and regulations.
  • Manage budgeting, cost control, and profitability to ensure financial targets are met, including monitoring food costs, labour costs, and overall concession profitability.
  • Track daily, weekly, and monthly sales performance, analyse trends and implement strategies to improve sales and increase foot traffic.
  • Review and optimize pricing strategies to ensure competitive pricing while maintaining profit margins.
  • Ensure proper cash handling and financial reporting processes are in place, including daily cash reconciliation and bank deposits.
  • Ensure that all team members deliver an outstanding customer experience, consistently exceeding customer expectations.
  • Handle customer complaints or issues in a professional manner, striving for quick resolution and satisfaction.
  • Implement strategies to encourage customer loyalty, including promotions, rewards programs, or special offers.
  • Regularly assess customer feedback and make necessary adjustments to improve service delivery.
  • Collaborate with the marketing team or mall management to promote the food concession through targeted campaigns, special events, and seasonal promotions.
  • Develop and execute in-house marketing strategies to drive sales and increase brand awareness within the mall (e.g., flyers, social media, mall events).
  • Monitor competitor activities within the mall and the surrounding area to stay competitive and identify trends that could be leveraged for growth.
  • Ensure compliance with all relevant health and safety regulations, including food safety laws, sanitation requirements, and workplace safety.
  • Conduct regular inspections to ensure compliance with food safety standards, cleanliness, and waste management practices.
  • Prepare and submit accurate weekly and monthly reports on sales, expenses, staffing, and inventory to upper management.
  • Maintain and enforce adherence to all operational policies, ensuring risk management and legal requirements are met.
  • Oversee relationships with suppliers and vendors, ensuring timely deliveries and high-quality products at competitive prices.
  • Negotiate contracts and pricing with suppliers to secure the best deals and maintain healthy margins.
  • Ensure that all products are stored, handled, and rotated according to best practices to avoid waste and ensure product quality.
  • Constantly seek opportunities for business growth, innovation, and operational improvements, including new menu items, processes, or services.
  • Monitor market trends and customer preferences to stay ahead of changes in the food and beverage industry.
  • Develop strategies to attract more customers and increase brand presence within the mall.

EDUCATION/EXPERIENCE

  • A minimum of a degree or diploma in Hospitality Management, Business Administration, or a related field.
  • A minimum of 5+ years of proven experience as a General Manager, Store Manager, or similar role in the food service industry (preferably within a retail or shopping mall environment).
  • Experience with marketing, promotions, or social media campaigns in the food industry.

REQUIREMENTS

  • Must have in-depth knowledge of food safety regulations, health and safety standards, and operational management within a food environment.
  • Must have strong financial acumen, with experience managing budgets, controlling costs, and increasing profitability.
  • Excellent leadership, team-building, and staff management skills, with a track record of building and developing high-performance teams.
  • Must possess strong customer service skills and the ability to resolve issues effectively.
  • Proficiency in using POS systems, inventory management software, and Microsoft Office (Excel, Word, PowerPoint).
  • Ability to work under pressure, multitask, and manage time efficiently.
  • Excellent verbal and written communication skills.
  • Ability to work flexible hours, including weekends and holidays, as needed.
  • Experience working with cloud-based software (e.g., Asana, Trello, Slack).
  • Must have a background in food trend analysis or product innovation.
